Prawn & Chorizo Pasta

Ingredients

  • 1 tablespoon olive oil
  • 1 ring chorizo, sliced
  • 1 teaspoon rosemary
  • 2 cloves garlic
  • 1 tablespoon tomato puree
  • 5 tablespoons red wine
  • 1 large jar passata
  • 1 courgette
  • 1 teaspoon sugar
  • Prawns

Method

  1. Heat the oil
  2. Chop chorizo, garlic
  3. Grate courgette
  4. Fry the chorizo over medium heat
  5. Add the rosemary and garlic
  6. Cook for a few minutes
  7. Turn up the heat, add the tomato puree and cook for 1 minute
  8. Add the wine and cook until the wine disappears
  9. Add passata, courgette and sugar
  10. Turn down heat and simmer for 15 minutes
  11. Add prawns and cook for 3-5 minutes
